Quick and Easy Fish Pie

Ingredients
Mashed potato (instant mash is fine)
400g fish pie mix
1oz/25g butter
1oz/25g flour
½ pint milk
1 egg
3ozs/85g cheddar cheese
Seasoning and single cream for mash
Pack of spinach leaves (optional)
Method
1. Grease a pie dish and put in the fish pie
mix, season with black pepper. Set oven to
Gas Mark 4/180°C.
2. Make the cheese sauce by melting the
butter in a pan, stir in the flour for a minute
then whisk in the milk. Simmer sauce until
it thickens, then add the cheese and pour
over the fish.
3. If you choose to add spinach, place this
into a colander over a sink. Pour boiling
water over to wilt the leaves. Squeeze out
all excess liquid then scatter the spinach
over the cheese sauce.
4. Place the mashed potato into a dish and
add a splash of cream and milk and a
small amount of butter. Lightly season.
Mash until fluffy.
5. Carefully spoon the mashed potato
over the top of the fish pie mix and
sauce. Brush with beaten egg and
sprinkle extra cheese on the top.
Add sliced tomato if you wish.
6. Bake for approx. 25 minutes until golden.
Serve with peas.
